Chicken or Turkey Stock Recipe

Making stock is a great use of leftovers. By making stock you can be sure you are getting everything you can from a meal. Stock can be used for soups and sauces or even as a flavor enhancer to other meats. 

This recipe can be used with chicken or turkey

Ingredients

  • vegetable oil or Olive Oil 
  • 1 turkey carcass
  • 2 cups carrots diced *
  • 2 cups onions diced *
  • 1 cup celery diced *
  • water
  • A few sprigs of thyme
  • 2 bay leaves
  • 1 tablespoon black peppercorns
  • 1 garlic clove crushed

Instructions

  1. In a large pot heat the oil and brown the turkey or chicken on all sides
  2. Add the vegetables and garlic and cook for 2 minutes, this will help release the flavor of your vegetables  
  3. Add water until all ingredients are covered   
  4. Add Herbs and Spices 
  5. Bring to a boil then lower to a simmer
  6. Be sure to skim off any foam that forms on the top
  7. Let cook for 4 hours you may cook longer for more flavor*

 Notes *

You can save the scraps from preparing your meals to use in this recipe. Things like carrot shavings, celery ends or onion skins can be substituted for diced ones. 

If you need to create a faster stock you can reduce the simmer time to 2 hours
You can also use an instant pot on High for 40 minutes to create the stock just be sure to bring all the ingredients to a boil then add them to your insta pot
